Almond Ricotta and Berry Salad.

I eat a salad almost every day. But I’ve yet to post any salad recipes here! Let’s change that, shall we?

I’ve been loving ricotta lately. I mean, I bought a container that has fifteen servings in it. Ah! That’s a whole lotta ricotta.

This salad is simple, yet tasteful.

Almond Ricotta and Berry Salad
Serves One


1 1/2  cups baby spinach
5 strawberries, sliced
1 tbsp almonds, sliced
1/8 cup blueberries
1/4 cup ricotta

Place the spinach in a bowl, or on a plate. Top the ricotta cheese on top of greens. Slice strawberries and place around the ricotta. Top the cheese with the blueberries, and sprinkle the tbsp of almonds across salad. Tada! Lunch, dinner, or a snack is served!
